Check it before I wreck it? This is a variation on EdWort's Haus Pale ale, dropping the crystal and subbing Munich and Aromatic for the Vienna. I'm going for a dry, yet malty brew with a nice balance of hops flavor and maltiness. Maybe I'm going to get too much maltiness out of my grist, though? Also, I just prefer the taste of Amarillo over Cascade.

Yeah, I know I should work on that. I have a Bayou Classic turkey-frier stand and I leave it cranked up all the way, although I probably shouldn't. I'm just being lazy, because I know I boil off a gallon every half hour when its on full. I should probably be aiming for a boil-off rate about half that?
 
There are some Simcoe hops somewhere that are just itching to find their way into that beer.
 
Finally bottled last week and cracked one open today. It was already carbed right up. Thse yeasties were hungry!

I forgot/didn't have time/didn't have the patience to dry hop it, so it went right to the bottles. Also, I somehow miscalculated my mash and/or sparge amount and ended up with 4 gallons instead of five. My efficiency suffered as a result, but long story short I ended up with 4.5 gallons at my target OG, but about 2x my IBUs (figure in I forgot to adjust the recipe for amarillo hops that were higher AA than estimated). Still never took a FG... I'll have to remember that next time I crack one open.

It's only my third AG batch so I'm not completely dialed in on my system, plus I was leaving town for two weeks a couple days after I made it.

Anyway, this is the best beer I've ever made. I think I'll change the recipe to try to hit this target again, but maybe I should call it an IPA next time. The maltiness comes on first, it's very mellow, not sweet, there's good body and then the hops takes over, not strongly but slowly. At first it's a little piney, sliding into flowery and orangey. It only has a slight amarillo hops aroma. It would probably have a better aroma if I had dry-hopped.
