Almost a dunkel, but I don't think it's quite there. Based on a recipe I found on beertools, I've come up with this, based on what I have on hand:

4 oz simpsons dark crystal
4 oz roasted barley
4 oz chocolate wheat

3.3# light LME
3# Wheat DME

.5 oz challenger 7.1 60 mins
.5 oz challenger 7.1 30 min

My problem is the yeast. I have wpl 400 belgian wit, or Saf 04 and 05.
I was thinking of splitting the wort into 2 5 gallon carboys and doing one s-04 and one s-05. But if the wpl400 is going to be better, I'll use that.

Any thoughts?

My problem is the recipe shoots for 1.050, and mine came out 1.022. (both on hydrometer and ATC refractometer)

Did I get absolute garbage from my steep?
2 + gallons: Started at 150. When it cooled down to 144 (after about 25 min) I heated it back up to 148. After another half hour I moved the grain bag to 1/2 gallon of water at 160.
20 minutes later I pulled the bag, and mixed the two pots together, and turned up the heat to start the boil.

was I that inefficient?

Any other thoughts that might help me out next time? (besides "buy a cooler" which is next on the list.)

There shouldn't be any significant extraction from the steeping grains. Something wierd is going on here if you're getting 1.022 with almost 7 lbs. of grain.
