You can't hurt them as far as bitter/flavor/aroma. You can make them fall apart during brewing more easily, but... they'll be no less of a mess than pellets. I let the Foodsaver evacuate what it can and push on the outside to help get as much air out as possible. Less air inside means they'll oxidize less and survive storage better.
