Pronounced cocoa and espresso flavor with hop bitterness and nose. Clean finish.
Grain bill:
20 lbs Maris Otter
1 lb Roast Barley
12 oz. Chocolate Malt (UK)
12 oz. Crystal 80L
8 oz. Flaked Wheat

4 oz. Light brown Sugar
2 1/2 inches of Brewer's Licorice Stick

Hop Schedule:
3 oz. Target (11%) at 60 min.
1 oz. Target (11%) at 15 min.
1 oz. Target (11%) at Flame Out

Mash 152 Deg (1.25 qt./lb) for 60 min.

Did not use a starter, but pitched three packs of Nottingham.

Aerate at pitch and again at 24 hours.

Ferment in mid 50's for 2 days then allow to rise to 65

Bottle with 2.50 oz Corn sugar for 1.8 vols.

The name is based on the stories of Czarina Catherine the Great
 
High bitterness with a flavor of strong coffee, roast and light licorice taste. The mouth is full and silky. The aroma is a mixture of hops, chocolate, roast and a note of alcohol (11.8% ABV). Carbonation is low.
