I usually brew inside a mud room that's rather small and has a exhaust fan for clearing carbon monoxide. The burners I use pump out quite a bit of radiant heat. Does anyone use fireproof insulation to decrease the risk of fire? Will fireproof insulation give enough protection from The radiant heat of larger burners like the blichmann?

What "radiant heat"? I use Blichmann floor burners and as long as there's a pot on top there's no "radiant heat" to speak of coming off them...

Cheers!

Rolling a rockwool mat around the kettle and burner should work
Glass mat will probably not be able to withstand the heat
So it depend on what you got on hand

But unless you already have this I would suggest using a heatshield instead
Hopefully you wont need to use a deflector in the ceiling

Use aluminum roof flashing. It comes in a roll and seems to be very good at reflecting infrared. You could mount it directly on the sheetrock wall.
