I'm new to beer making, and I'm having a wee bit of a problem with the siphon get-up that I got from my lhbs...How exactly does one go about creating the suction to get the beer moving from the fermenting keg to the bottle? I imagine that using one's mouth the way gas is traditionally siphoned would be unsanitary, and make a bit of a mess. What is the correct way to get the beer flowing??

I meet so many brewers who suck on the hose and look puzzled when I describe proper syphoning.

Not necessary with your cane, but filling the hose with sanitized water then creates suction when one end is in your beer and the other, lower end dumps the water (followed closely by beer;))
 
That's an auto siphon. Just put the black end in the beer and the tube into what ever you are racking to and pump until you get flow.
