Easy 120VAC to controllable 12VDC?

I'm using an STC-1000 PID for my keezer and fermentor. I have some time so I'm going to rebuild the two control boxes (adding a 10A fuse and putting them in actual housing instead of ziplock boxes). While I'm at it, I figured I would install a constant but adjustable 12VDC output to control something like a fan.

Any suggestions on the the easiest strategy? I'm trying to think of a solution that avoids involving the PID but rather just takes the 120VAC from the wall outlet and uses it in a circuit parallel to the PID/heater/cooler circuit.
