Nervous About Lilac Wine

I'm just starting a one gallon batch of lilac wine (from Jack Keller's site), but I'm having some trouble determining exactly how many grams 3.5 quarts is (or how to measure quarts at all). I picked 180 grams of flowers, so I'm starting the batch off that way, but I'm not too far along now that I can't adjust the water or add more lilacs if need be.

I'm nervous that my finished product will barely have any lilac qualities (because I didn't add enough), or too overpowering (because I added too much).

Does anyone have any input? Has anyone ever made lilac wine before? If so, how did it turn out?

Also, I'm thinking a lilac mead would be cool; I would use the same recipe (I'll post it later if anyone is interested), substituting the sugar for honey. How do you think it'll turn out?
 
when picking flowers/fruit i use a 1g koolaid pitcher to measure my volume. when a recipe is calling for qts its a volume measurement.
