I know you are supposed to grill on labor day, but I like to braise beef ribs. Dry rub for two days, smear with tomato paste, roast until nice and black then braise in redwine, brown stock, and whatever else. Of course skim the fat.

I saw the pic of those ribs and knew you were from NC. Hell, you could probably eat those bones.
