I just finished brewing my first all grain batch (Yooper's Ruination Clone). It's in the fermentation chamber I built so I can control temps pretty effectively. The fermometer strip on the side of the glass carboy say it's 66 but the temp controller is set for 62. The fridge is NOT running. Should I turn it down a few degrees?
 
Is there a temp probe? Tape the probe to the side of the carboy and insulate it from the ambient air. Make the chamber manage the temp inside the carboy.
 
O.K. I'll give it a try. Do I need to get some styrofoam or will some cloth be enough to insulate it? Thanks!

Edit: I took a dishcloth and folded it over until it was an inch or so thick. I used painter's tape to adhere the cloth to the side of the carboy with the probe sandwiched between the two.
