Digital thermostat with xlr connects?

I just bought a digital thermostat for my freezer and I'm fixing to build a box to house it in.I wanted to use xlr connects and wire it directly to the compressor and use a 1/8 stereo jack for the temp probe. Then I'll prolly super glue magnets to the box. I saw this idea from Black Heart brewery on you tube. Here is some pics of the parts with links.Any suggestions and feedback would be much appreciated.

Why stereo for the temp probe?
I mean, I know it'll still work, but you have an extra conductor there that's unneeded. You should just go mono instead.
Also, I'm not sure what the amperage rating is for XLR since they're generally meant for audio. If I was going to do sweet locking power connectors, I'd probably go with some Neutrik Powercon's. Then again though, I used to work for a company that was a distributor for those types of things, so I always got them at cost...
 
Didn't realize they were stereo I meant to find mono connectors. Thanks for the info!

I think these might do the trick.
If not how would i wire this to a plug just like the 2 stage. Just don't remove bracket?
