hi guys, first of all let me say thanks for the wealth of information available at this site. i've learned so much good stuff on here, and my first 3 brews have been quite a hit. i haven't asked any questions until now, since the search feature has answered all my questions so far. :)

so far i've only been using recipe kits with great results, but now i'm wanting to experiment a little for my 4th homebrew. basically, i have a nut brown ale recipe kit that i'm using as a base for an india brown ale (i LOVE terrapin's IBA).

ok, so here's my recipe so far:

NutKicker India Brown Ale - 5 Gallon Recipe

3.3# Muntons Hopped Light LME
4# Muntons Amber DME
1# Muntons Light DME
1# Dark Brown Sugar
8oz Muntons Dark Crystal 2-row
6oz Muntons Crushed Chocolate 2-row
1oz Muntons Crushed Roasted Barley

2oz Columbus 14% @ 60mins (is this too much?)
1oz Simcoe 12% @ 15mins
0.5oz Palisade 7% @ 5 mins
0.5oz UK Fuggle 4% @ 5 mins
0.5oz Palisade 7% Dry Hop
0.5oz UK Fuggle 4% Dry Hop

Yeast: ??????

Primary 7 days
Secondary w/dry hop 14 days
Bottle condition 14 days

I have a pack of Munton's Dry Yeast, but I'm open to any recommendations for a more appropriate yeast for this brew. I don't know much about different yeast characteristics yet.

Thanks in advance for any help y'all can provide. I'm wanting this brew to be my best one yet, so I'm asking the experts!

Munton's Gold would do a better job. The regular yeast has been selected for malt + cane sugar recipes and doesn't attenuate all-extract well.
