It is ok to leave a starter yeast sitting for 3 days? I know that most people pitch the yeast starter after 2 days but would it be ok to sit for one more day?

Perfect, put it in the fridge to settle the yeast, and then decant out the nasty oxygenated 'beer' on top and dumb the yeast slurry into your wort.
