I'm putting together a steam injection system for my new brewery and I was curious about the steam systems that people out there are running.

What are you using for a steam generator? Batch size? Ramp rates? etc.

My plan is to use a 23 qt. Presto pressure cooker for my generator for 10 gallon batches. I'm thinking that close to 5 gallons of 250F water will probably be enough to raise the mash temp pretty quickly for most steps. The one thing I haven't looked too closely into is how fast the mass transfer step takes place (superheated water to steam). That's really the bottleneck in the heating. Eventually I'll go back to my mass transfer book and see if I can figure it out, but first hand experience from you guys is better than reading a textbook. :)
