Have pear juice left, want to try some jhalapeno wine so why not combine them? Was thinking just use all pear juice (from steam juicer) to make one gallon and just float the diced peppers in the primary no additional water?
 
You might take a look at the Texas Twang thread over on Meads. I have some of that going. Jury's still out as to how mine will taste, as it's fairly new but the thread might inspire you.

Yea i will be pitching yeast tonight, guess we will see how it turns out :)
