So after my first brew I decided to get a little creative and try for a Double (imperial) IPA. The worry I have is that I may be going a little overboard on the hops. Don't get me wrong I love love love hoppy beer, however, I would love love love some feedback. Also, at what point do I add the Dextrose/ Corn Sugar? Here is what I have come up with...:ban:

Ingredients:

-1 lb. 2 Row Malt grains
-.6 lbs Crystal 45 Malt
-.6 lbs Carapilis Dextrin Malt
-9.5 lbs Briess Gold Malt Extract
-5.50 oz Apollo Hops
-4.75oz Chinook Hops
-2.50 oz Simcoe
-1.00 oz Centennial
-1.25 oz Zythos
-1.25 oz Citra
-1.25 oz Cascade
-1.25 oz Crystal
-0.75 lbs Dextrose (corn) sugar
-2 packs White Lab WLP001 CAL ALE Yeast

Instructions:
Steep grains in 2 GAL of water @ 165 degrees for 30 min
Sparge grains with hot water
Add 9.5 lbs of Breiss Gold LME off of heat and mix
Bring to rolling boil
Add 3.50 oz of Apollo hops (90 min)
Add 0.75 oz of Apollo hops (45min)
Add 1.00 oz Chinook hops (30min)
Add 1.00 oz Centennial hops (0 min)
Add 2.50 oz Simcoe hops (0 min)
Cool Wort to 67 degrees and transfer to primary fermenter with 3 GAL of water
Aerate then pitch two packs of White Labs WLP001 California Ale yeast
After fermentation in primary stops, siphon to secondary
Dry Hop 1.00 oz each of Zythos, Crystal, Citra, and Cascade 7-9 days
Then add 0.25 oz each of Zythos, Crystal, Citra, and Cascade last 5 days
Keg Beer-Enjoy

Please let me know if this recipe is absurd or if it is something worth trying out. TIA.
 
Double dry hop and Citra too! That should be great, but I am a hop head. One thing I noticed is there are no flavor hop additions between 30 minutes and 0 minutes. Instead of all that lovely Simcoe at 0, I would split that into 3 equal additions at 10, 5 and 0.
 
What you have there with the 2 row is a partial mash.

Drop the steep down to 1g(1.5-2gt per lb of grains) and steep at about 152° for 60m.

I would drop the 45m addition or move it back to 60m and move the 30m addition to 10 then shift some of the 0m back to 5m.

Switched hop additions to these times...

3.50 oz of Apollo hops (90 min)
0.75 oz of Apollo hops (60min)
1.00 oz Chinook hops (10min)
1.50 oz Simcoe hops (10 min)
1.00 oz Centennial hops (5 min)
1.00 oz Simcoe hops (5 min)
 
You can add the sugar at any time. 15-0m would be fine. I honestly wouldn't even bother with corn sugar. At that amount table sugar will not add any off flavors.

Depends on how dark you want it. I would only use about .5lb of 45L. Use Beer Calculus to play around with your recipe if you don't have software.
