Does anyone know if you can blend two beers together at different stages of fermenting and aging to produce maybe mellow tastes or maybe ,,I don't know ,just a thought.

Sure, it's even done commercially. Newcastle comes to mind and there are probably plenty of others.
Look up 'krausening.' Traditional German technique. Guinness even blends in a bit of soured beer with fresh beer to get a distinctive taste, though that's a bit more unusual. And some british breweries blend in a bit of their finest cask-aged ale with the more regular fare to add a bit of complexity.

Also for those who keg, blending can be a LOT of fun. Yesterday we did an amber/stout, delish!
