I have found a local source of emmer and I want to use it in a wit. I would appreciate hearing if anyone has used it or other grains in a similar grains.

Not finding much does have me interested now.
Depending on your experience I my try it too.

I've been doing some equipment upgrades but plan on brewing this one this weekend.
 
I finally got to brewing this.

I ended up boiling the emmer separately so the starches would be accessible. When boiled this stuff makes oats look like water. I am fairly certain you could build a wall out of it.

Gravity came out lower than expected though I am not sure whether it was the emmer or the fact that I had to use a different mill. My barley crusher died first thing on brew day.

Beyond that things went smoothly and it is fermenting away at 68 degrees.

I tasted it at kegging and it tasted like a wit. I didn't detect anything added by the emmer.

Will update once it goes on tap.
