OK here is a question for you guys. The SWMBO is always getting these 5 gal jugs of water for the water cooler. Has anyone ever used one of these as a fermenter? Or is there something that I should worry about using one of these as an fermenter?

It sounds like they are very similar to a better bottle. They are definitely worth a try. They may hold less than a 5 gallon batch if they hold 5 gallons of water.
 
Check the recycle code on the bottom. If its #1, then its the same plastic as BB, although may not be as thick, and may allow more o2 permeability. HDPE is also used for fermenting. If you see #7, you really have no idea what the bottle is made of, and general consensus is don't use for fermenting. There are a zillion threads on here debating this if you are curious.
