Hi, I'm brewing an IPA. I used Coopers, a little over two pounds of malt, about a pound and a half of corn sugar, and just used the yeast that came with the Coopers.
I started my beer several weeks ago, and by several I mean about 3.5 months ago. About 5 or 6 weeks ago I racked my wort from the primary into the secondary. I have not exposed my worth to anything since I first started fermenting it, except when I exposed it to air during the racking process from primary into secondary; I haven't even taken one gravity reading. Further, everything, including all components of the autosiphon were thoroughly sanitized with that brewing iodine.
On Monday of this week, I noticed that there was a small growth, almost sheet like that was growing out from the sides on top of the beer. I figured it was nothing and I haven't thought about it since. Today I took a look and I noticed that the smooth, very thin, sheet-like growth has grown inward from the sides of the carboy about a few more inches. I'm going to try to add a couple of pictures here so you can actually see what I'm talking about. I will admit, it's kind of tough to see the growth, but you can definitely make it out in the pictures. No yeast raft looking things that take your breath away.
So, is it possible that I let it sit and ferment for too long? I always figured that the longer you let it go, the better. Mathematically, I should be looking at something in the neighborhood of 8% ABV, the initial fermentation in the primary carboy was very active and lasted a few days, so up to this point I am confident that things had been going swimmingly. Is this something that I need to toss, or should I just go ahead and dry-hop it at the start of June as I had originally planned?
