Just tasted my English Bitter (the one I so nearly ruined by adding one gallon too much water), and it's great! I'm so chuffed! I used Cascade hops (not really English ;) ) and they have given it a floral / citrus flavour. It's mellowing out nicely now, and the bitterness / flavours are balancing out. It's not as watered down as I feared. All in all a good summer ale.

Thanks to you guys for telling me it would work out ok...you were right! :cool:
 
The same thing happened to me with my Mexican (now Lite) beer. I added over a gallon more water than needed- but it turned out to be a really refreshing brew- not watered down at all.

Isn't homebrewing great, so forgiving of the little mistakes you make with the recipe! Pity the old head isn't so forgiving the next morning after sampling the brew :drunk:
