I am going to make this beer from The Homebrew Recipe Guide. Calls for 2 Ounces of Mount Hood Hops and 1/2 ounce Fuggle Hops.. I have tons of hop in my fridge but nothing from the Hallertau family. I have Saaz, Amarillo (a lot of this), Magnum and Cascade since I usually make IPA's.

Any thoughts? You think I could get away with using Amarillo or one of the above in a Porter? Vanilla porter keep in mind. I love Stone Vanilla Porter so perhaps a bit of bitterness would work well for someone that likes that sort of thing.

Other ingredients:
6 2/3 lbs Drak Malt Extract
1/2 lbs Chocolate Malt
1/4 lbs Black Patent Malt
1 lbs Rolled Oats
2 ounces Hop (whatever I end up using)
1/2 ounce Fuggles Hops (whatever I end up using)
American Ale Yeast
1 Vanilla Bean
2 TSP Almond Extract
3/4 corn sugar
