i am in the process of extending a mini fridge by adding a collar to it. I plan to add some insulation sheathing but was wondering if i need to cover the 2X4 frame (specifically the vertical posts) with insulation as well? I know the R value of wood isnt that great but is it worth the effort to insulate it?

I would imagine it is not a big deal, the temp difference is not going to be that great anyways between outside and inside. Combined with the fact that the fridge is never being opened, I would think it would keep up just fine. Of course the insulation would reduce power consumption, but not by much.
