I just ordered "DK Belgian Pale Ale Limited Edition Extract Kit" with Wyeast 3655 PC Belgian Schelde Ale yeast from Northern Brewer. http://www.northernbrewer.com/default/dk-belgian-pale-ale-extract-kit.html

Wondering if anyone has brewed this kit before?
Used this yeast before? Thoughts/tips...
What do you think of the recipe as it stands...?

Should be here Friday... I am curious about the yeast in particular. What kind of performance it may give me, and I wonder if anyone out here knows what the source of it may be....

I believe the kit and yeast just came out January 1 2010. Not sure you'll get many responses...

Guess I will have to report back then... I was still hoping someone was familiar with this yeast. But maybe it is too new as well.

First report:

Fermenting along well.
-Ambient temp 65F Fermenting at 72F
-Brew is quite YELLOW in the carboy
-Krausen is not huge by any means
-Blowoff smells like swamp gas, not sulphury like 1007 Greman Ale, but stinky poo like swamp gas! Hope my beer doesn't taste like swamp mud, lol.
 
UPDATE DAY 2-3:

Foul odor is decreasing to almost none now. Sweeter aromatics are coming through.

I think this may have been the fastest, most violent fermentation I have seen so far. Pitched Sunday afternoon and on Tuesday evening I would say it is probably 85% finished fermenting. I used a smack pack with no starter.

Wort started out medium-brown/amber. Now the fermenting beer is a light tan/yellow.

The krausen never got to be very large, in fact I thought it was pretty small (~1" high in a 6.5 gallon carboy) Compared to every other batch I have done. Krausen was mostly white head-like foam with a small amount of 'brown clumps' around the outside edge. Come to think of it, the smack-pack inflated as fast as I have ever seen one inflate. After 45mins -1 hour, the smack-pack was almost ready to burst. (Thoughts?)

The sediment on the bottom of the carboy is very thin too. Maybe ~1/8" brownish-tan sediment with another ~1/8" white sediment on top of that. (I assume the white sediment IS yeast, all other yeasts I have seen so far have been tan...wtf?).

Join the conversation if anyone out there is using this yeast/making this kit... I would like to hear your experiences...

when i ordered the ag kit they were out of Wyeast Schelde so I'm using Pacman instead. I don't think I'll get the typical Belgian flavors - instead of using another belgian yeast i went with Paman since i've never used it before and wanted to give it a try.

I plan on brewing this kit Saturday as my first AG. Hopefully all goes well.
 
I had to wait on the yeast. But I did get it.

But like I said in my earlier posts, the gas coming out of the fermentor did not smell like the usual. It smelled like rotten stinky poo swamp gas for the first two days. Now it is starting to sweeten out and I am getting some aromatic smells. Should be interesting to see what it is like when I get home today. The yeast at the bottom of the fermentor is a pure white color too. That I haven't seen before.
 
I brewed this saturday and due to an interupted sparge (friends dog jumped the fence and took off for the hills) og came out 1.044. Checked the gravity tonight and it was 1.008. First time I've used a starter and it seemed to work pretty well with the pacman yeast.
 
I made the all-grain version and my wife made the extract. Both versions are outstanding! I really love the Schelde yeast, and wish more people would buy/use it. This is a really good kit.
 
I'll be bottling up my all-grain batch on Sunday. I tasted some of the hydrometer sample when I transferred it to secondary and it was already very tasty. Much more so than any other beer I've tasted that early on.
 
I've started my own version of his kit. I used some Sorachi Ace hops that I just received. I used the Schelde yeast. Very excited to see what this yeast can do.
 
I bottled up my batch. It smelled great going in the bottle. I chilled down the leftovers from bottling as a sample and it tasted a little like tea. A little disappointing especially considering how good the hydrometer samples tasted at room temperature.

Oh, well. The true test will be after it been has conditioned, carbonated and chilled. It could be a totally different beer in a few weeks.
 
On Saturday I popped one bottle in the fridge (just 6 days after bottling). I popped one open today and it's delicious! Really well balanced with a slight tartness that makes it really refreshing. Can't wait until it's fully conditioned but so far it's already great.
