I am looking for a recipe that is super malty and little to no hop aroma. Something like a scotch or a winter ale. I've looked in the recipe database, but nothing has caught my eye.

1 # C60
.5 # Pale Chocolate Malt
Mash @ 154F
2 OZ Cascades @ 60
Ferment with US 05 @ 65F
Simple and delicious.

I forgot to add that I do not have the abilities to lager as of now so I couldn't do a bock, although I would like to.

How would Maris otter do in place of the Munich malt? I've been very interested in using MO.
It's not a Scottish or winter ale, but my Dead Guy clone is a total malt bomb. It's an ale version of a maibock, sort of.

I can vouch for Yoopers Dead Guy clone. I have to pour it into a MASSIVE beer mug just to serve!!
BTW Yooper, I don't think I ever shared this, but I dry-hopped about a twelve-pack's worth of your Dead Guy clone onto a half-ounce of Amarillo and it was BREATHTAKING... There were these subtle fruit flavors that blended perfectly with the malty sweetness and it was SO good... I suggest 1.5-2 ounces per 5-gallon batch.
