I plan to brew a brown ale this weekend (OG 1.052) and I'll use dry nottingham yeast. I was just wondering, should I put 2 packs or only one is enough? I mean, is it preferable to have a stronger fermentation or can it give off flavors by adding too much yeast? Thanks.

1 package is usually for 5 gallons.....so if all you are doing is 5 gallons.....

Just ONE package!

I know, but I was reading a bit of John Palmer's book and he use 2 packages frequently in 5 gallons batches... I was just wondering if it can improve the beer.

Ok thanks ALBrewer... answer are too quick on this forum! Don't have time to write! I'll use only 1. Thanks.

I could see using two packs for a big beer like a russian imperial stout or barleywine, but certainly up to 1.060 or so I wouldn't hesitate to use just 1 packet.
