gluten free mcgee with ginger?

I want to make a gluten free for my mom to try. I found a recipe on brew friend.com and I found gluten free mcgee. I was wondering could I add ginger, and if so when and how would I incorperate it? Would a ginger and lemon be better?
 
I made a GF Ginger Beer in the spring that turned out okay. The approach I took was to layer in the ginger flavour at 45min, 30min, 15min and finally a dry hop for a week or so, kinda like cooking. This way you get the bite from the "Dry Hopped" Raw Ginger and more mellow flavours the longer that it's actually cooked. Also, I added some complimentary flavours at 5min, lemon grass, Lemon Zest, Nutmeg, Cinnamon and Cloves.
 
Lemon grass is brilliant! Thank you so much. My mom LOVES her ginger, and I figured lemon would compliment the ginger. I will make sure to try that. Thank you. :)
