Hi All -
I just finished brewing my first fruit beer yesterday and I am a bit concerned.
I pureed 4 lbs of frozen mixed berries and added to primary BEFORE adding any yeast (after aerating the wort). The fermentation has started now, but I have a few questions:
1) Is there a high risk of contamination since I did not pasteurize the berries?
2) Will adding to primary ruin any fruit taste and only make it tart?
3) If there is any chance of salvaging the beer, how long would you recommend for primary before moving to secondary?
Any help is greatly appreciated.
