Store in a sealable container
Yup. In the bag, in humidity, it won't stay dry. (I have the same problem with corn sugar in the summertime.)

I bought a 3 lb bag of light DME for making starters. Bought one of those oxo storage containers, is sits on the counter right next to my sugar and flour.
im in houston so i deal with same thing. I keep and open bags sealed up, but in the fridge.

Airtight container with bag rolled up. I store my 50 lb bags in a airtight dog food container. Stays fresh in powder form through the whole bag.
