IIPA - Hop Suggetsions please!!!!

Here we go! This will be a special brew as a buddy is coming to town to brew with us!!!

Not Sure about a hopping schedule. Part of me says to keep it simple and do all the late additions with Centennial, and another part says to try to add some varioius hops.

here is the grain bill:

13.2 lbs 2-row
3.3lbs Munich 10L
1 lb Caramel 60
.5 lb Cara pils
.5 lb Victory

Do you think that .5lbs Victory is enough? I could up that to 1 full lb/

For Hops I was thinking of aobut 50 IBU's of Chinook (could use Pearle as well) and then 50 IBU's of late additions.

Here is my American Hop inventory:

5oz Cascade
10oz Centennial
5-6oz Chinook
4 oz Pearle
2 oz Willamette
2 oz Amarillo

So let me know what my possibilities are. I have never made a IIPA.

I think it really depends on the flavor and aroma you are looking for. of course you will need plenty of early addition hops to give you your bitter, but flavor and aroma are subjective to your taste. I found a downloadable .pdf on the hopunion website that has good descriptions of many hop varieties. it includes style uses, aa levels, storagability trade perceptions, all kinds of goodies. you might want to get it to use as reference material. I personally am fond of cascade for the citrus values in summer beers
 
I like the 50/50 split on IBU's. I have an IPA that I make with no traditional bittering additions, and I try to always get at least 50% of my bittering from late hop additions in my hop forward beers.

Personally, I love Cascade and Amarillo, but Centennial works well in late additions as well. I say Centenial and Amarillo late, with Cascade ( and possibly Willamette) dry hop.

What about the Victory in the grainbill? Yea or Nay?
 
I like victory, it gives a good dry malty/bicuity flavor, similar to what you will get from the Munich, but not quite as sweet, I use 1/2lb in my IPA along with munich and a little pale chocolate to get a nice malty flavor.
 
I like amarillo, it is a little milder than centenial, with a little more grapfruit character. I would go with it as well. Here's how Jamil Z did it...

0.5 oz. (14 g) Centennial pellet hops, 10% alpha acid (20 min.)
0.5 oz. (14 g) Amarillo pellet hops, 7% alpha acid (20 min.)
1 oz. (28 g) Centennial pellet hops, 10% alpha acid (10 min.)
1 oz. (28 g) Amarillo pellet hops, 7% alpha acid (10 min.)
1 oz. (28 g) Centennial pellet hops, 10% alpha acid (0 min.)
1 oz. (28 g) Amarillo pellet hops, 7% alpha acid (0 min.)

I would suggest using your quantities to get the desired IBU's and these times to simplify a little. I made this beer, it was f-ing amazing. from www.mrmalty.com
 
I'm a serious hop head.. and Amarillo is one of my favorites.!

I would use pearl in the beginning boil, centennial at the end, and Dry hop with 2 oz Amarillo:D
