I've tried one brand of low cost vacuum sealing bags from the local grocery with lame results.

I work hard at pampering the yeasties, so I re-hydrate in 80 to 90 deg. water with GoFerm.
Also, my wort usually winds up with a thick layer of foam at pitching time which tends to cause
    dry yeast to ...

    confused. I'm ...

Waytogo! Can you make a general comparison between the taste of this beer at older vs. younger?
    It really is beautifully clear.

I'm want to start kegging my beer, but don't have fridge space for 5 gallon corny kegs. So I'm
looking at the 2-3 gallon systems that use disposable CO2 cartridges for charging. The idea is
    that I can...

I've never used Pacman. But Safale 05 is a fantastic yeast. If the fermentation is done
properly, the result is unbelievably clean and crisp.
