    I bought a wort chiller from Midwest about five years ago. It's 8 inches across and 1/2 inch
    copper tubing 25 feet. I don't know if they still carry it, but it works great for my 3 gallon
    setup.

    Extract, or allgrain? Extract usually finishes a little higher gravity. If it were me I'd go
    ahead and bottle.

    Since APA is one of my favorite styles, yes it looks great. Mosaic is becoming one of my
    favorite late addition hop. Try a 30 min. Hop stand at 170 dg. To me, this looks like a solid
    recipe.

    Get the wort moving! Stir the wort with a sanitized spoon, or use the chiller the swurl the
    wort. Way faster.

    Centennial, Cascade, Citra,Chinook. Tried Liberty in a couple batches of Vienna Lager that I
    really liked. Just made a pale ale with Mosaic as the aroma hop, so I'm waiting for that.
