I think your plan on when to add the nibbs sounds good. I would leave them for 5 to 7 days.
taking a gravity readings is the only way to know for sure if the beer is ready to be bottled.

I use 1275 Thames valley fairly often and it never gets a large karausen.

I would look for a starter set at a home brew store on line or in your area. they should also
be able to sell a recipe kit with everything you need for your first batch. just follow the
recipe and ask...

it is nice to see that others are into session beers. I have been trying to keep one of my
three taps with a 4% or lower beer. my next session will be the Scottishheavy 70 from brewing

I use 4 oz as a dry hop in secondary for my chocolate porter. I als,o use a little vanilla
which helps with the chocolate flavor
