    ABOUT ME

  • I'm just an old home brewer that did a lot of brewing years ago and am recently re-interested in starting up again. Married with two girls in high school, which is probably why I now need so much beer!
  • Contract Specialist for Dept. of Homeland Security
  • Greg Horwitz
  • Country
  • Silence of the Lambs, The Shining
  • White Collar, Burn Notice, Criminal Minds
  • Ludlum and King novels
  • I was into brewing years ago making mostly ales and some lagers. I no longer have any equipment and am starting from scratch, trying to recall what all I need to get going again. I do secondary fermenting. My biggest concern is that living in north Texas, it is so hot for so long, especially this year, that I won't have a cool enough place to run my brewing operation.
  • Undecided as yet but brown ales and wheat beer for sure.
  • Male
  • Married

My "yes" response was directed toward the comment about taking SG readings. I will be doing the
calculations to determine the right amount of sugar for the batch.

Golddiggie-Yes, I take a starting gravity read then wait a week and start re-testing until no
lower reading is had. After carbing for 3 wks, I move to a cold frig around 40 for the
    duration. I resist ...

By 3 weeks, I am referring to the amount of time I let the bottled brew sit at 70deg. to allow
for carbonation before moving the bottles to cold storage. That is the amount of time I have
