    I find myself walking down stairs every couple of hours to look at my carboy during
    fermentation. My last American Wheat brew bubbled solidly for 9 days. Hope yours turns out
    well.

    I've always used a secondary carboy to condition and reduce sediment in the bottles. It only
    cost $20 from my local brew store, definitely worth it.

    Starters: do you consider it a requirement, a good idea or don't use one. I always use White
