If you're force carbing and will keep it cold until its gone then you can just cold crash and
keg. To store at room temp you could bulk pasteurized it or try k Meta and sorbate after cold

Are you saying that if you dont pitch enough yeast that you wont get as high of an alcohol
content? I thought you wanted to pitch enough just to get it started fast and avoid infection.

Did I do something wrong? I followed all the instructions, and after fermentation got a final
gravity of around .998. Taste was dry but quite yummy. I caramelized 1.25L of honey and added.

I've used smack packs before that didn't swell. Fermentation started off a bit slower but still
