I would consider adding more yeast, too. Then just leave it alone for 3 weeks. This is a big,

measure the gravity with a hydrometer. Once it's the same a few days apart, you can

The ginger might be interesting, but be careful, it can take over a beer. Try adding it in
small amounts to a glass of water and let it sit in the fridge, covered, for a day, then taste.

I don't see valves. How are you transferring liquid on brew-day? Also, looks like you're
