I would consider adding more yeast, too. Then just leave it alone for 3 weeks. This is a big,
complex beer. Forget about it until it's done it's thing.

The ginger might be interesting, but be careful, it can take over a beer. Try adding it in
small amounts to a glass of water and let it sit in the fridge, covered, for a day, then taste.

I don't see valves. How are you transferring liquid on brew-day? Also, looks like you're
boil-tested the pots on that stove, right? Figure out how long sparge water takes to heat so
