Thanks for the input guys. The cascades are juuuuuust starting to brown and smell pretty decent
to me. The sterling actually FEEL more "papery" to me. But they're a still really light green

If you look at the specs on Northern Brewer, it looks like you can use it up to 100%. It's
listed as a base malt. I'd say go for it.
