I would suggest trying liquid yeast if you can get it; and I have no reference to offer as why
liquid yeast would be superior to dry yeast. All I know is that I've always used liquid yeast
    (Wyeast sma...

That FG is on the very high side for anything that doesn't have Imperial or Barley Wine in the
name. I am assuming that you allow your brew to ferment until the gravity readings are the same
    for 2-3 d...

Also, the Caribou Slobber (low hops) was good initially and now has twang.

The extract twang you read or hear about is usually related to extact in cans that is old. Your
northern brewer kits probably had pretty fresh LME and so I doubt that is the issue.I wonder if
    you like...

Some other info...I ferment for three weeks in a temp controlled fridge at 65F. I do a partial
boil of about 4 gallons. In both of these batches I believe I did add most of the LME late in
    the boil. I...

I am 5 or so extract batches in and I need a hand improving my future brews. It seems like my
brews develop a sweet/twangy taste after they have been bottled for two months or so. I recall
    them tastin...

Yeah 1/2 lb of special B is good. That stuff is kinda strong. I use a 1/2lb in my dubble and
it's great.Table sugar is cheaper then the candi. Unless your using the D2 type syrup. The rock
    candi reall...

I think you need a healthy dose of Special B and Caramunich.I'd cut back on the candi sugar and
make that up with simple table sugar. St Bernardus uses yeast from Westmalle. WLP 530 or wyeast
    3787 is ...

I have been thinking about. Im not sure how close it is to St Bernardus had looked at that AHS

I've been looking around various sources (mostly all-grain) about a St. Bernardus 12 clone
recipe. Combining a lot of them together and converting to extract, here is what I am thinking
    of going with....
