The ester profile is definitely set by now. Racking to the secondary was the right move. I
always rack as soon as primary fermentation is over, one week or less.

That white stuff could be sanitizer from walls of the fermenter or something, i had a little
bit once before i pitched yeast i scooped it out, and it was all good
