If I add it slowly to the secondary in 2 oz increments over the course of a couple days and
take taste samples, that sounds like a decent method based on your post!

Anyone use all dark or all amber DME to make it darker?I used a combination of amber dme and
dark amber dme. It turned out great. I did back sweeten it though.
