Don't quite know how I got into brewing, been into it for about 3 years now with the exception of taking a year off due to the Army sending me to Iraq for a yearlong vacation.
Past setup included a 5-gallon plastic fermenter that I bought with a brew your own beer kit, made a pretty good beer, no bombs and good AC. Did a little homework and found out that plastic can be problematic with sanitation so I discontinued the use of my 5-gallon fermenter and have been going with 1-gallon glass jugs for the past few months.
Currently, I am brewing 2 gallons of Sack mead, put them into secondary about a week or so ago and gravity is reading just above 8% -
I have two recipes I will be trying out here very soon:
1. Pyment with all natural comb honey from local stock
2. Acerglyn using the same comb honey as the first and also using blueberry and a few other ingredients -
Sweet Apple Cider
Sack Mead
Ginger Honey Mead
Blueberry Honey Maple Syrup Mead
Pear Mead - Male

I agree no sugar, more honey. What was your SG at bottling? I believe that sweeter meads have
