    ABOUT ME

  • I enjoy wines of all kinds. That's all I brew, I don't really enjoy the taste of beer too much so I haven't bothered with that yet. My next big project will be a 5 gallon vanilla oak mead. I'll let you know how it all goes when I begin.

I live with my wife and little one. That's about all I do nowadays.
  • I got bored one day and saw a 4chan how-to pic with a gallon o welches, 2 cups of sugar, and plain bread yeast. I tried it and got pretty good results. Since then I have been learning the trade and perfecting different recipes and methods.
  • A 5 gallon vanilla french oak mead. I can't wait for that one.

I ended up adding another 18lbs of black grapes. They were sanitized then crushed into the
buckets. Man that's a lot of wine... I think I shall make a sweetened and a dry version of
    this.

Why did you not squeeze? Next time, squeeze the heck out of the fruit. A press presses the
fruit (squeezes it) so that the pulp left is almost dry. You want ALL of the fruit juice out of
    the fruit, so...

If it's still fermenting, I would add 2lbs more per gallon. If fermentation is done, add 1lb of
chopped raisins per gallon.Excellent, it shall be done then. Since I now have a whole lot of
    wine, I thi...

You'll end up with 8.5 or so. I would have added leas water, but if you added enough sugar,
you'll have a light body wine.Next time, don't add more than 1/2 gallon of water per 10 lbs of
    fruit. If you...

9 gallons at this time. But I am sure I will end up with less after a good settling and
    racking.

Oh yes, I forgot. I removed the pulp today by lifting the nylon bags and rolling it around to
drain the liquid without squeezing. I got a lot, but it's still a lot of liquid and I'm afraid
    that adding...

It seems that the wine in its current state is around 9 gallons. Did I add too much water to an
already watery fruit? Or will there be around 4 gallons of sediment? I need a fix for this if
    anyone has...

How much campden for 30 pounds of frozen muscadines? I did not crush them before freezing. They
are now thawing....I don't think it matters how much the weight is, the general rule is to use
    1 tab per...

I think what I will have to do is add the rest of the water later. I'm rather cheap so I have
to use a food grade bucket that is precisely at a 5 gallon capacity. Plus, with all that fruit
    it will tak...

Are you planning on adding all 5 gallons of water? If so, you'll need about 2 lbs of sugar per
gallon of water. Double check your SG as you add sugar to get to 1.090 or so.I think what I
    will have to ...
