my experience with unpasturiesd honey is you will get a good bit of foam at the first stage of
ferment. unless you heat the honey & remove the head 1st.i've been making mead for 4 years now.

if you leave enough head space (say 1/2 gal ) you'll have no problem. when fermment slow's down
you can top off with water or honey or fruit puree.
