It turned out pretty great. If you use a fresh cinnamon stick monitor it closely, too long and
it can be overwhelming. I only let mine sit in there for a few days before I bottled.

I think I have some Chinook sitting around, would probably make for a more effective bittering
addition. I agree though, Galaxy do taste too damn good to be used that early.
