I would say don't try to do too many things at once right away. I would focus on getting the
process down for your first couple of brews and then slowly start working on getting things

When I want to carb my kegs using the set it and forget it method, 10-12psi @ 40f for a couple
weeks, do you just put the gas on the regular "in" side or do you put it in the "out" so that
it bubbles ...

That one has gotten me a few times. I will forget to change the recipe to all grain. Also i
think that Beersmith with convert from extract to AG for you, but i may be wrong on that one.
