Once the beer has hit FG (Final Gravity) thats the best its going to be. No need to add more

I currently have several bottles sitting at room temperature(70-75 degrees). Should I store

sounds like a good plan to me.don't drink it all in 2 months just because you said you'd wait
that long. try to have some left to try in 6 and 12 months so you can learn how the beer
evolves over time...
