I have a gallon of spice mead and I want to age it with oak. So Which oak should I use -

I am pretty sure that raw honey has the yeast itself. We add more yeast just to speed up the
fermentation. Naturally water content is less than 17% , once we increases that after diluting,
    fermentatio...

There was no mold and it tasted fine. Should I be worried? It's been 10 days. It's only honey
    and water.

I took first reading for my mead , it wasPotential alcohol by weight : 5%, Specific gravity. :
    1.042, Percent sugar. : 10%Now it's alcohol : 6%, sp : 1.046, Sugar 12%. I thought it should be
    other way...

It was just traditional mead - raw honey and water. I didn't added anything else. Fermentation
started after lot of stirring. I believe raw honey has the yeast and after honey's water
    content is more ...

Thanks guys. I will rack it today. I am guessing because I was shaking it too much to start the
fermentation without adding the yeast, mold developed on the sides since there were not enough
    lactic ac...

It's my first time for mead making. It's been 10 days and I can see the fermentation going on.
But I see the green spots on the carboy wall. I did sanitized everything completely. I would
    really appre...
