  i think the the aroma is part of the grains, and mosty hopps. i have experienced the carmel
  like taste with my alt-beir. congrats on a well-brewed batch, & keep the fermenter full.

  if its in a bucket use a flashlight to see where the krausen is at. You should be able to use
  the light on the other side of the bucket, and look through to see inside.

  try irish moss, it's cheap and ez to use 1 teaspoon per 5 gallon batch, put in about the last
  10 mins. of your boil.

  I use a bleach mix /w water. you don't need much bleach, check a homebrew book for a solution
  mix. & i rinse with a mild warm tap water, let it dry. Just think that when people 1st learned
  how to brew...
