If you pulled it at 175, that's why is was dry. You should get it up close to 190. At 175 the

You might also consider a Kolsch. Certainly not as hoppy as a Pilsner Urquell or SA Noble Pils,
but it's a nice refreshing "lager-like" hybrid that can be femented up to the upper 60's.

Seems to me the idea is to get the desired gravity at the desired volume...not an exercise to
get the max sugars from a certain amount of grain. So if my goal is to collect 7 gallons
pre-boil at 1.040...
